Preparation: Ingredients: 2 pounds ground beef 1 small onion, chopped. Garlic powder (to taste) 1 beef bouillon cube or pack 1 teaspoon salt (adjust to taste) 1 teaspoon black pepper (adjust to taste) 1 teaspoon paprika 1/2 teaspoon dried thyme 2 teaspoons Worcestershire sauce 3 tablespoons ketchup 2 cups water 1 cup of frozen peas and carrots For the Mashed Potatoes: 4 cups potatoes peeled and diced. 1/4 cup butter 1/4 cup milk 1 egg yolk Salt and pepper to taste For the Slurry Ingredients: 2 cups of water 3 tablespoons of flour Instructions: For the Filling: In a large skillet, cook the chopped onion over medium heat until it becomes translucent. Add the ground beef to the skillet. Cook and stir the beef until it's browned and crumbled. Drain any excess fat if needed. Stir in garlic powder (to taste), the beef bouillon cube (crushed), salt, black pepper, paprika, and dried thyme. Mix well to evenly distribute the seasonings. Add Worcestershire sauce, ketchup, and 2 cups of water to the skillet. Stir everything together, then let it simmer over medium-low heat for about 10-15 minutes until the mixture thickens. Taste and adjust seasonings as necessary. Next add in 1 cup of frozen peas and carrots or (your choice of frozen vegetables). For the Mashed Potatoes: While the beef mixture is simmering, boil the peeled and diced potatoes in a separate pot of salted water until they are fork-tender (about 10-15 minutes). Drain the potatoes and return them to the pot. Add butter, egg yolk (for color) and milk. Mash the potatoes until smooth and creamy. Season with salt and pepper to taste. Assembling the Shepherd's Pie: Preheat your oven to 400°F. Transfer the seasoned beef mixture into a greased 9x13-inch baking dish or a similar-sized casserole dish. Carefully spread the mashed potatoes evenly over the beef mixture, creating a smooth layer. Optionally, you can use a fork to create decorative patterns on the surface of the mashed potatoes. Place the dish in the preheated oven and bake for about 25-30 minutes, or until the top is golden brown, and the filling is bubbling. Remove the Shepherd's Pie from the oven and let it cool slightly before serving. Enjoy your homemade Shepherd's Pie, a comforting and hearty dish that's perfect for any time of the year!
