
Nutella Filled Cookies | Chocolate Chips & Hazelnut | oozy chocolate chips cookie
Gooey Nutella stuffed cookies with chocolate chips and hazelnut chunks - heaven in every bite! Ingredient: • 113 g butter, room temperature • 125 g demerera sugar or light brown sugar • 1 egg, room temperature • 188 g all-purpose flour • 1 tsp baking powder • 50 g hazelnut • 50 g dark chocolate • Nutella Instruction: 1. Preheat your oven to 160°C. 2. Spread the hazelnuts in an even layer on the baking sheet. Place in oven and roast for 10 minutes. 3. Beat together butter and sugar until fluffy, and then add egg and beat again until smooth. 4. Whisk together flour and baking powder. Gradually add dry ingredients to wet until completely combined (be sure to scrape the sides and bottom of the bowl with a spatula to ensure that all ingredients are well-incorporated). 5. Add in the finely chopped chocolate and roasted hazelnuts then mix until combined. 6. Cover bowl with cling wrap and chill for at least 3 hours. 7. Scoop heaped teaspoons of Nutella onto a lined tray, and freeze until solid. At least 60 minutes. 8. Once dough has finished chilling, preheat oven to 175°C and line cookie sheets with parchment paper. 9. Scoop your cookies with a cookie scoop to portion. Flatten the dough slightly into a disc shape, and add a frozen lump of Nutella to the middle and then wrap the cookie dough around the Nutella fully so it’s covered! They will be balls of cookie in the end! 10. Place on prepared cookie sheet, each cookie might spread a bit whilst baking so you want room for them to grow! 11. Bake for 12-14 minutes it depends on cookie size, remove from oven and allow to cool completely on cookie sheet. 12. Enjoy!
