Don’t sleep on this recipe and please hit the super thanks button because I went all out to get this perfect textured sorrel cake recipe Sorrel cake recipe: Sorrel puree: 2 1/4 cups fresh sorrel 2 cups water 4-5 tbs ginger juice (add gradually (freshly extracted , no artificial ginger) 1 cinnamon stick Orange peel (just a small amount) *Add water, sorrel and cinnamon stick to boil (Simmer for 10 minutes, pour off 1 cup of the liquid) Then add orange peel and ginger juice and boil for 5 minutes. Other ingredients: 1 lb butter 1 lb brown sugar 8 eggs 1 1/2 tsp grated lime & orange zest 3 cups flour 1/4 cup bread crumbs 1 1/2 tsp salt 2 tbs baking powder 1 tbs cinnamon powder 1 tbs nutmeg 1/2 tsp mixed spice 1/4 Rum & wine mix 2 tbs beetroot powder (optional, just for added color)(available at Walmart & on Amazon) 2 tbs Vanilla 1 tsp rose water 1/4 tsp almond essence I used 4 cups fruit, use less for a more cakey texture Baked at 280 degrees Fahrenheit for 2 hours (test with a skewer to ensure it comes out with light crumbs or comes out clean) Yield 10” & a 9” cake
