Smoking a Pork Shoulder Overnight on a Pellet Grill is EASY! I bought a 10 pound pork butt and ended up smoking it for 15 or so hours. 9 hours on super smoke setting 3 hours at 200 and the remaining 3 hours at 225. Start out by scoring the pork butt. Apply a heavy coat of your favorite seasoning to all sides of the butt and let it sit for 15 to 30 minutes. Get the smoker fired up to the super smoke setting and put it in and go to sleep. When you wakeup you can spritz if you want. I wrapped it at the 12 hour mark round 160 degrees for 3 hours then pulled it and let it rest for another 2 to 3 hours.
