Chicken Dum Biryani Recipe A traditional and flavorful Indian dish made with marinated chicken, fragrant basmati rice, and aromatic spices, cooked together using the dum method😋 Ingredients✨ For Marinating the Chicken: • 500g chicken (bone-in, cut into medium pieces) • ½ cup thick yogurt • 1 tbsp ginger-garlic paste • 1 tsp red chili powder • ½ tsp turmeric powder • 1 tsp garam masala • 1 tsp coriander powder • 1 tsp cumin powder • 1 tbsp lemon juice • 2 tbsp chopped coriander leaves • 2 tbsp chopped mint leaves • 2 green chilies (chopped) • 2 tbsp fried onions (optional) • 1 tbsp oil • Salt to taste For the Rice: • 2 cups basmati rice (soaked for 30 minutes) • 4 cups water • 2-3 cloves • 2-3 green cardamoms • 1 bay leaf • 1-inch cinnamon stick • 1 tsp shahi jeera (caraway seeds) • 1 tsp salt • 1 tsp oil For Layering & Dum Cooking: • 2 tbsp ghee • 1 pinch saffron strands (soaked in 3 tbsp warm milk) • 2 tbsp fried onions • 1 tbsp chopped mint leaves • 1 tbsp chopped coriander leaves • ½ tsp garam masala Instructions Step 1: Marinate the Chicken 1. In a bowl, mix chicken with yogurt, ginger-garlic paste, red chili powder, turmeric, garam masala, coriander powder, cumin powder, lemon juice, chopped mint, chopped coriander, green chilies, fried onions, oil, and salt. 2. Cover and refrigerate for at least 2 hours (overnight for best results). Step 2: Cook the Rice 1. In a large pot, boil 4 cups of water with cloves, cardamoms, bay leaf, cinnamon stick, shahi jeera, salt, and oil. 2. Add the soaked rice and cook until 70% cooked (the grains should still be firm). 3. Drain and keep aside. Step 3: Assemble & Cook on Dum 1. Heat 1 tbsp ghee in a heavy-bottomed pot. Add the marinated chicken and spread evenly. 2. On top of the chicken, layer the parboiled rice. 3. Drizzle saffron milk, remaining ghee, fried onions, chopped mint, chopped coriander, and garam masala over the rice. 4. Cover with a tight-fitting lid. Seal the edges with dough (optional) to trap steam. 5. Cook on low heat for 30-40 minutes (you can place the pot over a tawa for even cooking). Step 4: Serve • Gently fluff up the biryani and serve hot with raita, salad, or boiled eggs.
