
Thai-style shrimp Coconut Curry
Ingredients: 2 tbsp. Coconut oil 1 medium onion thinly chopped 3 garlic cloves (minced) 2tsp. Curry powder 1tsp. Garam masala 1tsp. Ground turmeric powder 1 tsp. Salt 1/2 red bell pepper chopped 3 Tbsp. Thai red curry paste 3 cups of fresh spinach 20-24 pcs of tiger shrimp peeled 1 (13ounce) can coconut milk 1\4 cup cilantro Juice of 1 lime Procedure: Heat the oil in a large pan, deep frying pan over meduim high heat. Add onion, and cook stirring until it begins to soften for 2 3 minutes. Add garlic and cook until fragrant for 1 minute. And add the curry powder,garam masala,turmeric powder and salt and toast for a minute or two. Add the red pepper and mix well. ( if the spices to dry add 2 TBSP of water) . Add the curry paste and spinach and cook until it wilts . Toss in a shrimps and stir welp and cook until they start to turn pink 3 4 minutes. Pour the coconut milk and stir to combine simmer the curry to 2-3mins. Ready to serve with rice.
