
Bacon, Egg, & Cheese Jiffy Muffins!
Ingredients: (Makes 12!) 1 box Jiffy corn muffin mix 4 pieces bacon, cooked and crumbled 4 eggs salt & pepper to taste 1/2 cup milk 1/2 cup shredded cheese 3 tbsp butter, melted Directions: 1. Preheat the oven to 400 degrees and line 12 muffin tins with liners or spray with cooking spray. 2. Melt the butter in a microwavable safe bowl. 3. Add the Jiffy mix, milk, bacon, cheese, salt and pepper to the melted butter and mix to combine. 4. Add the 4 eggs in and mix until combined. 5. Fill the muffin tins 2/3rds of the way full with the mixture. 6. Bake 13-15 minutes. 7. Remove from the oven and let cool a couple minutes in the pan. 8. Use a butter knife along the edges and remove the muffins to a cooling rack to cool completely. Enjoy!!! These little muffins are so good and so easy to make! I feel like they could have used more bacon. I used the storebought precooked and I think it is smaller than regular bacon. Sausage would be really good too! Thanks for watching!
