think of this coconut curry salmon as the nutrition olympics meets couchtime comfort food. health warrior meets low key lazy girl — aka your perfect weeknight night dinner. we’re talking one pan. 30 minutes. a creamy (barely spicy) mega flavorful sauce that warms up your life in all the right waaayss! ✨ what else: a quality piece of crispy pan-seared salmon (hiii omegas!), more veggies than you’ll notice, and some steamy rice to sop it all up. 💯 6-INGREDIENT COCONUT CURRY SALMON 1 lb. salmon filets • 2 tbsp. coconut oil or olive oil • 1/4 up red curry paste • 1/2 cup finely diced red bell pepper L 1 (13.5 oz) can full-fat coconut milk • 1 tsp. fish sauce • optional: lime, cilantro, basil, scallions for garnish 1) heat coconut oil in a large sauce pan over medium-high heat for 30-60 seconds. add red bell pepper and saute 2-3 minutes, or until soft. add red curry paste and a pinch of salt (optional); stir continuously for approximately 1 minute, or until fragrant. 2) bring to a boil and add salmon filets, skin side up. cook 8-10 minutes, spooning sauce over the fish periodically. once fish is cooked to your preference, remove from pan and set aside. 3) return sauce to medium heat and reduce for 2 to 3 minutes, whisking or stirring frequently. remove from heat, stir in fish sauce, 1/4 teaspoon salt and lime juice. serve salmon with red curry sauce spooned over top and top with sliced scallions.
