Banana Bread with Sugar-Lemon Glaze Ingredients: For the Banana Bread: • 2 large ripe bananas • 2 tbsp (30g) sour cream • 2 large eggs • 1 ½ tsp vanilla essence • 2 cups (200g) sifted flour • ¾ cup (170g) sugar • 1 tsp baking soda • ¾ tsp baking powder • A pinch of salt • 142g (10 tbsp) unsalted butter or ghee, softened • Optional: • ½ cup chopped and roasted walnuts • 1-2 tbsp raisins (or substitute with chocolate chips) For the Sugar-Lemon Glaze: • ½ cup (100g) powdered sugar (icing sugar) • 1–2 tbsp fresh lemon juice (adjust for consistency) Method: 1. Prepare the Wet Ingredients: • In a large bowl, mash the bananas. • Add sugar and whisk lightly. • Add softened butter or ghee and mix until well combined. • Add eggs one at a time, mixing after each addition. • Stir in vanilla essence and set aside. 2. Prepare the Dry Ingredients: • In a separate bowl, sift together the flour, baking soda, baking powder, and salt. • Using a whisk attachment on a stand mixer or a hand electric whisk, mix the dry ingredients on low speed (around setting 3). 3. Combine Wet and Dry Ingredients: • Gradually add the wet ingredients to the dry ingredients. • Start by adding a small portion, mix for a few seconds, then continue adding in stages. • Mix until just combined—do not overmix. 4. Add Optional Ingredients: • If using walnuts, raisins, or chocolate chips, gently fold them into the batter. 5. Bake the Banana Bread: • Preheat oven to 175°C (350°F). • Grease a rectangular baking tin and line it with baking paper. • Pour the batter into the prepared tin. • Bake for 40-50 minutes or until a toothpick inserted in the center comes out clean. 6. Prepare the Sugar-Lemon Glaze: • In a small bowl, whisk together powdered sugar and 1 tbsp of lemon juice. • If the glaze is too thick, add a little more lemon juice, a few drops at a time, until it reaches a smooth, pourable consistency. 7. Cool, Glaze & Serve: • Let the banana bread cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely. • Drizzle the sugar-lemon glaze over the cooled banana bread. • Let it set for a few minutes before slicing and serving.
