No Oven, Eggless Almond Cake | No Oil/Butter, No Maida, No Refined Sugar | Healthy, Easy Almond Cake

Today we are going to whip up a healthy no-oven almond cake! Made with whole wheat flour, this cake is eggless and free from refined sugar. Due to popular demand for no-oven baking recipes, we’ll be baking this cake in a pan, no oven needed. This easy and convenient method is perfect for everyone, no matter your kitchen setup! Ingredients: 1 ¼ cups milk 1/3 cup chopped soft dates (I'm using Medjool dates) ½ cup almonds ¾ cup whole wheat flour 1 tsp baking powder ¼ tsp baking soda 1 tsp vanilla extract Chopped or flaked almonds (for topping) Instructions: Prepare the Date-Milk Mixture: Add 1 ¼ cups milk and 1/3 cup chopped dates to a pan. Cook over low to medium heat for 3-4 minutes until the dates become tender and soft. Remove from heat and let the mixture cool completely. Once cooled, transfer the milk and dates mixture to a blender. Blend until smooth and creamy. Set aside. Make Almond Flour: In a blender, add ½ cup almonds and grind into a fine powder. Set aside. Mix the Dry Ingredients: In a medium-sized bowl, combine ¾ cup whole wheat flour, 1 tsp baking powder, and ¼ tsp baking soda. Add the almond flour to the dry mixture and mix well. Add the milk and dates mixture to the dry ingredients. Stir in 1 tsp vanilla extract. Mix gently until everything is well combined. Prepare the Cake Pan: Line a cake pan with parchment paper. Pour the batter into the pan. Tap the pan a few times to settle the batter. Smooth the top with a spatula and sprinkle chopped or flaked almonds over the batter. Bake the Cake: Preheat a large pan by placing a small stand inside and cover it. Heat on low for 10-15 minutes. Place the cake pan on the stand inside the preheated pan, cover, and bake for 55-60 minutes on low heat. Allow the cake to cool completely in the pan. Once cooled, remove from the pan and serve. Enjoy your healthy, oven-free, almond cake! Oven Baking - bake the cake in a preheated oven at 180°C/ 350°F for around 45 min.
