
JoJo's (Potato Wedges)
Jojo, also known as potato wedges, but we have always called the Jojos, are battered, crispy, slightly spicy, delicious potato wedges. The seasoning on these can be tweaked to your preferences. You can go a little more spicy or a little less too. I went just a little kick because some of my family can't take spice. I would personally add a little cayenne pepper to this and even more siracha. Parboiled the potatoes for only 5 minutes, but it's just enough to get it fork tender in the fry doesn't need to be quite as long and you don't have to wonder if they're cooked through. As I've stated before, I'm a ranch girl, and my homemade ranch was exactly what I needed for these beauties. I do not do ketchup at all, but the ranch is 🤌 so good with these. 3 large potatoes, or 5 smaller potatoes Cut into 8s, par boil for 5 minutes, and drain 1 cup flour 1/3 cup corn starch 1 teaspoon garlic powder 1 teaspoon seasoned salt 1 teaspoon paprika 1 teaspoon onion salt 2 tablespoons - 1/4 cup siracha 1 cup water Oil, for frying, shallow fry in 1-2 inches of oil Fry for 5 minutes, turning halfway through.
