Serves for 4 people. Ingredients: Chicken Cubes 1 kg (cut the chicken breast into cubes) For marination: salt to taste Kashmiri red chili powder 1 tbsp turmeric powder 1 tsp garam masala powder 1 tsp coriander powder 1 tbsp cumin powder 1 tsp chaat masala powder1 tsp black salt half tsp kasoori methi 1 tsp ginger & garlic paste 1 tbsp lemon juice 2 tbsp cooking oil 1 tbsp (for frying) For Cooking Masala: cooking oil 1 tbsp cumin seeds 1 tsp chopped onion 1 cup ginger & garlic paste 1 tbsp chopped tomatoes 1 cup red chili powder 1 tsp Kashmiri red chili powder 1 tbsp turmeric powder 1 tsp coriander powder 1 tsp cumin powder 1 tsp water as required chicken masala powder 1 tsp garam masala powder 1 tsp kasoori methi 1 tsp green cardamom powder 1 tsp brown onions half a cup chopped coriander half cup fresh mint half-cup For Cooking Rice: Basmati Rice 1 kg (soaked the rice for 30 minutes) salt to taste lemon juice 2 tbsp bay leaves 3 nos. green cardamom 4 nos. cloves 6 nos. star anise 1 no cinnamon 1 inch water for cooking rice For Garnish: coriander leaves chopped brown onions mint green chilies saffron (mix in milk) Method: Take 1kg of Basmati Rice, wash it 2 to 3 times with cold water, and soak it for 30 minutes. Now take chicken breasts, and cut them into cubes. Transfer them to a bowl, and marinate the chicken breast with the powdered spices, salt to taste, kasoori methi, black salt, ginger & garlic paste, and lemon juice. Mix well and marinate the chicken for 1 hour. Take charcoal, burn it on the gas, and smoke the chicken by adding oil to live charcoal. Cover and let the chicken smoke for 10 mins. In a pan, add cooking oil, when the oil is hot, add the marinated chicken, and fry the chicken for 5 mins. Flip the chicken and fry the chicken on the other side. Once the chicken is cooked remove it and set it aside. Now in another pan, add cooking oil, then add cumin seeds and chopped onion. Sauté the onion for 7 to 8 mins on medium flame. When the onions are light brown, add ginger & garlic paste, and sauté for 5 mins on medium flame. Add chopped tomatoes and sauté the tomatoes for 7 to 8 mins on medium flame. Once the tomatoes are cooked, it's time to add powdered spices. Add red chili powder, Kashmiri red chili powder, turmeric powder, coriander powder and cumin powder. Sauté the powdered spices for 10 mins on low flame. Add water to the masala, so it doesn't burn and mix well. Now add chicken masala powder, garam masala powder, kasoori methi and green cardamom powder, mix well, and cook for 5 mins. Add the grilled chicken, mix well and cook for 15 minutes. Cover the chicken and cook for more than 5 minutes on low flame. Put in brown onions, chopped coriander and fresh mint, and mix well with the chicken. Add water and cook for 5 mins on medium flame. Now chicken is ready, topped with coriander, mint brown onions and green chilies. Boil water in a vessel and add salt, lemon juice, and whole spices. Before adding rice remove all the whole spices. When the water is boiling add the soaked basmati rice, and cook the rice 70%. When the rice is 70% cooked remove and layer the cooked rice on the chicken and masala. Add coriander, brown onion, mint, green chilies and saffron. Cover and cook on dum for 15 minutes on low flame. Chicken Tikka Masala Biryani is Ready.
