For Kebab: ½ kg boneless chicken Grind the chicken into minced meat using a grinder. Add 1 medium-sized onion (chopped). Add 4-5 green chilies and grind again. 1 tbsp red chili flakes 1 tsp cumin powder 1 tsp garam masala powder 1 tsp salt ¼ cup breadcrumbs Lightly grind the mixture again and transfer it to a bowl. Add a small amount of chopped fresh coriander. Add a small amount of chopped mint. 1 tbsp fresh cream 2 tsp ginger-garlic paste Mix everything well. Grease your hands to shape the kebabs. Take a small portion of the mixture, shape it into kebabs using skewers or sticks. The kebabs are now ready to fry. Frying the Kebabs: Heat 5-6 tbsp cooking oil in a pan. Fry the kebabs until golden brown. Once fried, transfer them to a dish. For the Gravy: Heat 5-6 tbsp cooking oil in a pan. Add 1 large onion (roughly chopped). Add 4-5 green chilies. Add 10-12 cashews. Sauté on medium flame until the onions turn soft. Once the onions soften, add fresh coriander (without chopping). When the coriander wilts, turn off the flame and let the mixture cool. Once cooled, grind the mixture into a smooth paste. Cooking the Gravy: In a pan, heat 3-4 tbsp cooking oil. Add 4 green cardamoms. Add 3 cloves. Add 1 tbsp butter. Let the butter melt for a while. Add ½ cup ginger-garlic paste and sauté well. Now add the previously ground paste. Add a little water and mix everything well. Add ½ tsp white pepper powder. Add ½ tsp black pepper powder. Add 1 tsp cumin powder. Add ½ tsp garam masala powder. Cook the spices on medium flame. When the masala reaches the right consistency, add ½ cup yogurt. Add 1 tsp salt (or as per taste). Lower the flame after adding yogurt. Cover and let it cook for a while. Once the oil starts separating from the gravy, add the fried Malai Seekh Kebabs. Add ½ cup fresh cream. Mix everything well. Add crushed dried fenugreek leaves (kasuri methi). Cover and cook for 5 minutes. Once oil appears on the surface, add lemon juice as per taste. Garnish with fresh coriander leaves. Dish out and serve.
