Prepare the Spinach: Blanch the chopped spinach in boiling water for 2-3 minutes. Remove and plunge it into cold water to retain its color. Drain and blend it into a smooth paste. Set aside. 2. Cook the Potatoes: In a pan, heat oil or ghee over medium heat. Add cumin seeds and let them splutter. Add finely chopped onions and sauté until they turn golden brown. Stir in ginger-garlic paste and green chilies. Cook for another minute until fragrant. 3. Add Potatoes: Add the diced potatoes and cook for a few minutes. Sprinkle turmeric powder, red chili powder, and salt. Mix well. 4. Add Tomato Puree: Pour in the tomato puree and cook until the oil separates from the mixture, about 5-7 minutes. 5. Combine Spinach: Add the spinach puree to the potato mixture. Stir well to combine. If the curry is too thick, you can add a little water to reach your desired consistency. 6. Cook: Cover the pan and let it cook for 10-15 minutes or until the potatoes are tender. 7. Finish with Garam Masala: Once the potatoes are cooked, sprinkle garam masala on top and mix gently. 8.
