How To Make Jamaican Jerk Chicken | Christine Cushing

I show you how to make Jamaica's most famous recipe : Jerk Chicken on the Bbq. First by making the marinade with hot Scotch Bonnet peppers, fresh thyme, crushed allspice ( pimento) and scallions and then how to get the perfectly crispy, dark brown fiery exterior that is perfectly tender and juicy in the middle in less than an hour. FULL RECIPE BELOW RECIPE: JAMAICAN JERK CHICKEN ON THE BBQ Ingredients: 1 Whole Chicken, preferably organic, cut in half 3-4 lbs (1.5 - 2 KG) sea salt to taste Jerk Marinade: 1 bunch fresh thyme, leaves only 1/2 bunch , green onions, chopped 2 cloves garlic, smashed 2-4 Scotch Bonnets or Habanero Chilies , 4 only for the daring zest and juice of 1 lime zest and juice of 1/2 tangerine 1 tsp. whole allspice berries, ground 3 Tbsp olive oil (45 ml) 2 Tbsp. brown sugar (25 ml) Worcestershire sauce, optional 1 TBSP. grated ginger, optional(25 ml) Blend all ingredients for jerk marinade in a blender or food processor. Store in a sealed container in fridge until ready to use. For a more intense flavour, pour jerk mixture over chicken and let stand in fridge at least 4 hours or overnight. Otherwise, pour 1/4 - 1/2 of this marinade for 1 chicken , cut in half and let stand in fridge until bbq is heated. Save remainder of jerk marinade in fridge for up to 2-3 weeks . Preheat BBQ to high Place jerk chicken, skin side down with grill on high, for 1 minute , just until grill marks appear. Immediately turn chicken over and turn burners directly below chicken off so that it cooks on indirect heat. Reduce other burners to medium/ low where temperature is 325 D F with closed lid. Brush occasionally with marinade and bbq for about 30-35 minutes when chicken should be a deep brown. Turn direct burners below chicken on again on low for 5 minutes to ensure it's fully cooked. Thermometer inserted into the thickest part of the thigh should read 170 D F . Let rest for 5 minutes.
