Fruit Tart with Creamy Almond Filling | With Buttery Shortbread Crust Recipe

Instead of using the more traditional vanilla custard filling, this tart is filled with delicious sweet almond paste. Super delicious! This recipe makes 1 tart, approx 10 inch / 26 cm in diameter, which is good for 8 rather generous servings. Ingredients for the light sweet pastry: 60 grams / 2,1 oz icing sugar 1 egg yolk half teaspoon vanilla extract a pinch of salt 60 grams / 2,1 oz cream cheese 60 grams / 2,1 oz butter, softened 200 grams all-purpose flour Ingredients for the almond paste: 80 grams butter softened 80 grams caster sugar (ultrafine sugar) 100 grams ground almonds a pinch of salt 2 eggs 1 tablespoon of dark rum, cognac or whiskey To top the cake: approx 500 grams / 1 lbs of fresh raspberries or strawberries, blackberries, or even blueberries melted apricot jam for shiny effect powdered sugar (oprional) Step-by-step guide: Preheat the oven to 200°C / 350°F / 180°C for fan ovens; in a large bowl, beat the egg yolk with the icing sugar, salt and vanilla until smooth and pale. Add the cream cheese and butter, then work in the flour to form a dough; add a little more flour if too sticky, but do not overwork the dough. Wrap the dough in plastic wrap and leave in the fridge for at least 30 minutes before rolling out. While the pastry rests in the fridge, let's make the almond paste; using a food processor or hand mixer, mix butter, sugar and ground almonds. Incorporate 2 eggs, one at a time; add 1 tablespoon of dark rum, cognac or whiskey, mix until smooth and creamy. Roll out the pastry to a thickness of 5 mm / 0,2 inch and place it in a round tart pan (approx 10 inch / 26 cm in diameter). Fill the tart with the almond paste and smooth the surface; bake in a preheated oven for about 25-30 minutes, or until golden brown and fully cooked.
