
Thandai Cup Cakes - Eggless | Thandai Mini Bundt Cakes | Holi Special
Thandai mini bundt cakes are fusion dessert that combines unique flavours of thandai : Thandai is a delicious and refreshing drink prepared by mixing milk with ground nuts & aromatic spices. Thandai is popularly served on festivals like Holi and Mahashivratri. Ingredients: Dry Ingredients: • All Purpose Flour – 2 and 1/2 Cups • Corn Flour – 6 tbsp • Baking Powder – 2 tsp • Baking Soda – 1 tsp • Salt – 1/4 tsp • Thandai Powder – 1/4 Cup Wet Ingredients: • Oil – 1/2 Cup • Milk – 1 and 1/2 Cup • Vinegar – 1/2 tbsp • Powdered Sugar – 1/2 Cup • Rose Essence/ Saffron Essence – 2-3 drops Sugar Glaze: • Saffron Sugar Syrup – 1/8 Cup • Powdered Sugar – 6 tbsp ( For 8 mini cakes) • Dry Nuts and Dry Rose Petals – For Decoration Method : 1. Mix all the wet ingredients along with sugar and thandai powder. Keep it aside. 2. Sift all the dry ingredients 2 times. 3. Mix wet and dry ingredients. Mix the batter with cut and fold method and prepare ribbon consistency batter. 4. Grease cup cake tray or bundt tray. 5. Fill thandai batter into greased tray. 6. Bake them at 170 degree for 14 minutes in a preheated oven. Soak the cake : 1. Using a skewer or fork, poke holes while mini cakes are still in baking tray. 2. Pour prepared Saffron water / Thandai Milk over the cake while the cake is still warm. Sugar Glaze: 1. In a bowl , whisk together powdered sugar / icing sugar , thandai powder and hot water to make a glaze. 2. Pour or spoon the glaze over the bundt cake. 3.
