Creamy and Cheesy Spinach Pasta | Healthy Palak Pasta

Creamy spinach pasta made with fresh palak puree, milk, wheat flour, and mozzarella cheese - a healthy, flavourful dish perfect for lunch or dinner! Ingredients: For the Sauce: • Butter - 1 tbsp • Oil - 1 tbsp • Garlic cloves - 1 tbsp (finely chopped) • Onion (medium) - 1 (small cubed) • Green chillies - 1-2 (finely chopped) • Carrot - ¼ cup (small cubed) • Cauliflower - ¼ cup (cut into small florets) • Sweet corn kernels - ¼ cup • Wheat flour (atta) - 2 tbsp • Spinach (palak) puree (blanched & blended) - ½ cup • Milk - 500 ml • Red chilli flakes - 1 tsp • Oregano - 1 tsp • Black pepper (crushed) - ½ tsp • Salt - to taste • Mozzarella cheese (grated) - 150 grams • Coriander leaves - 2 tbsp (finely chopped) For Boiling Pasta: • Water - 7-8 cups • Salt - 1½ tsp • Penne pasta - 2 cups Step-by-Step Method: Preparing the Sauce: • Heat butter and oil in a pan over medium heat. • Add finely chopped garlic and sauté until aromatic. • Add cubed onions and stir until they turn transparent. • Add green chillies, carrots, cauliflower, and sweet corn. Stir for about 3-4 minutes. • Lower the heat and add wheat flour (atta). Stir for 1-2 minutes to remove the raw taste. • Pour the spinach puree and cook for 1-2 minutes, stirring continuously. • Gradually add milk while stirring to avoid lumps. • Add red chilli flakes, oregano, crushed black pepper, and salt to taste. • Keep stirring until the sauce thickens to a creamy consistency. Turn off the heat and set aside. 2. Boiling the Pasta: • In a large pot, boil 7-8 cups of water. Add 1½ tsp salt and cover until it comes to a boil. • Add pasta and stir immediately to prevent sticking at the bottom. • Cook the pasta as per the package instructions, stirring occasionally. • Once cooked al dente (firm to bite), drain the pasta and reserve some of the boiled pasta water for further use. 3. Combining the Sauce and Pasta: • Reheat the sauce and adjust consistency using reserved pasta water if needed. • Add the boiled pasta, grated mozzarella cheese & finely chopped coriander leaves to the sauce. • Stir until the cheese melts completely. 4.
