Ingredients: • 200 g broccoli • 1 carrot • ½ red bell pepper • 1 onion • 1 garlic clove • 5 eggs • 100 g hard cheese • 1 tbsp olive oil • Salt, pepper – to taste • Green onions – optional Instructions: 1. Prepare the broccoli: Separate it into florets, cut into bite-sized pieces, pour boiling water over it, cover, and let sit for 15 minutes. 2. Prepare the vegetables: Cut the carrot into thin strips, chop the onion, and slice the bell pepper into thin pieces. 3. Sauté the vegetables: Heat a pan with olive oil, sauté the carrot, then add the bell pepper and onion. 4. Add the garlic: Grate or finely chop the garlic and add it to the vegetables. 5. Make the egg mixture: In a separate bowl, whisk the eggs with salt and pepper. Add the chopped green onions. 6. Cook the dish: Pour the egg mixture into the pan, evenly distribute the broccoli, sprinkle with grated cheese, cover with a lid, and cook on low heat for another 10 minutes. 7. Done!
