This week I want to show my favorite pastry cream recipe. It goes in many things that you have probably had before and also can be made into different variations. Delicious on its own, this is a recipe you need to have in your arsenal! Recipe makes about 2 cups of pastry cream 1.25 cups whole milk 1 vanilla bean 3 large egg yolks 90g granulated sugar 32g corn starch A couple notes: A lot of recipes call for flour instead of cornstarch. I personally don't like the taste and don't think it's as delicious as cornstarch. I would recommend against substituting. -If you want to make this dairy free you can swap out whole milk for coconut, soy, or almond milk. Most liquids should work. It will still make a good pastry cream It will thicken up after it has cooled. So be sure and whisk it to loosen it up. Add more milk if you want a thinner cream.
