What I ate in a week in Mexico following the starch solution is what I will be sharing with you today. I spent a week in Cabo San Lucas, Mexico. I wanted to share with you some of the meals I was able to eat that week. Was I totally oil free? No, but a little bit of oil here and there on a vacation is not going to derail you. I was able to eat whole food plant based all week. Lots of oats, rice, potatoes, beans, veggies, fruit. It was amazing! I came home weighting the exact same as when I left.
