Ingredients: 2 medium onions 5 cups cold water 2 tsp cider vinegar, or of choice ¼ cup brown sugar 2 tsp mustard ½ cup Molasses ½ cup ketchup 1 tsp black pepper 1 tsp sea salt 1 cup chopped fat pork or bacon 1 bag white uncooked white beans 1 tbsp Worcestershire sauce 1 tsp onion powder Slow cook on low for 4:00 to 6:00 hours, covered. Method: In large bowl, add uncooked one bag of white pea beans, then top with cold water cover add ½ tsp sea salt, leave soaking overnight on counter top. When ready to start making the slow cooked beans, you will need a slow cooker with lid, they can be baked as well. Start with chopping your onions and add to the bottom of slow cooker with lid. “ you can fry them first if you like the caramelization”. Next drain all water off beans and add to slow cooker, then top with 5 cups cold water and all the seasonings and ingredients, except your pork or bacon this you can fry first for a few minutes to release the oil..… Then pour pork or bacon and oil over beans and other ingredients, stir in. Put the lid on, then slow cook on low for 4 to 6 hours, check half way through the cooking time, add more water if needed stir, then cover and continue cooking. Bonita’s Tips: When slow cooked beans are done, remove from heat, serve hot or cold. Always label and date your bottles before storing them, these are for short time storage only and placed in the fridge. 2 to 3 month unopened..... Fry onions or fat pork to give the baked beans a caramelization taste. roasted red peppers an excellent alternative for replacing ketchup in this recipe. Open up a jar or roast them yourself and puree in the food processor. They will add a pop of colour and flavour and a extra tbsp of brown sugar.
