Chawli Usal | Black Eyed Beans Curry | Marathi Recipe | Easy Recipe | Quick And Easy Recipes For sprouting the beans: 1 cup black eyed beans 2-3 cups water Wash and soak the beans in water overnight. Once hydrated, transfer into a colander, cover and keep in a warm place overnight (you may need to keep a little longer until you see them nicely sprouted) Once they are sprouted, immerse them into water for the cover to loosen up. Peel the covers for pearly white beans. Keep aside For the masala crush: 3-4 garlic cloves A very small piece of ginger 1 green chili Few coriander leaves Roughy grind these and keep aside. Do not use water. For the curry: Peeled beans 1 medium onion chopped fine 1 tsp cumin seeds ¼ tsp asafetida Masala crush ½ tsp turmeric 2 tbsp red chili powder 1 tbsp coriander powder 1 tbsp cumin powder 1 tsp fennel powder Salt as per taste ¼ cup coconut milk 1 tsp ghee Coriander leaves for garnish 2 tbsp oil 1 ½ cups hot water for cooking Heat the oil and add cumin seeds, asafetida, onions and saute until golden and soft. Add the masala crush and saute for 1 minute for the raw flavor to go off. Add the peeled beans and saute for 1 minute. Now add all the powders and salt. Mix well and saute for a few seconds. Add hot water, mix, bring to a boil, cover, and cook for 10-15 minutes, checking once in between cooking to see if the beans are soft. Check for doneness. Add the coconut milk and ghee.
