
Vegan and Gluten Free French Bread (Gum Free)

Vegan & Gluten Free French Bread Recipe Ingredients 300g Gluten Free Rice Flour Blend* (recipe below) 30g chickpea flour 18g psyllium powder** 7g instant yeast or 9g active dry yeast 7g baking powder *** 20g sugar 5g salt 30g oil + 10-20g for brushing 360g warm water or plant based milk (38C/100F) Method To activate yeast - mix active dry yeast with warm water and sugar. Leave it for 10 – 15 minutes to get bubbly. Skip this step if using instant yeast. Sift and mix all dry ingredients. Add all wet ingredients and stir well by hand until smooth or use electric mixer. Cover and put in the refrigerator for 12-24 hours. When you are ready to bake - put baking tray with water on the bottom rack of your oven and another tray on top rack to pre-heat to 460F. Sprinkle some gluten free flour on the counter, gently knead and fold dough into a log. Transfer on cutting board covered with parchment paper, cut lengthwise with sharp knife and brush it with some oil. Take the pre-heated baking tray out, flip it upside down and transfer parchment paper with the dough on top of hot tray. Bake with steam for 15 minutes at 460F. Lower the temperature to 400F and bake for 30 minutes without steam. Cool on wire rack completely before slicing and enjoy! *Gluten Free Rice Flour Blend – 300g 100g tapioca starch 200g white rice flour Gum free rice flour blend used in this recipe is based on 1:2 ratio of tapioca starch to white rice flour.
