Worcestershire sauce (7 ml) ½ tsp. Smoked paprika (2.5 ml) 2 -4 Tbsp. whole grain bread crumbs (25-50 gm ) Salt and pepper to taste 4 slices raclette or fontina cheese 4 brioche buns, brushed with olive oil, split and toasted- if desired 4 slices heirloom tomato Boston lettuce Pickles Mustard and ketchup Combine ground meat, egg, onion, Worcestershire sauce , paprika , salt and pepper and in a bowl and blend gently with hands until well mixed . Divide mixture into 4 pieces and work each pieces into a thick but flat patty as per video. Drizzle. Chill until ready to grill. Heat a grill on medium high. Cook the burgers until charred on the outside and just cooked through, about 3-4 minutes per side ( for medium ) melting a slice of cheese on each during the last 1 minute of cooking.
