Greek Lemon Potatoes: • Greek Lemon Potatoes | Christine Cushing Cast Iron Cornbread: • Cast Iron Cornbread | Christine Cushing Hummus: • Hummus | Christine Cushing Subscribe for more videos: https://goo.gl/wNqDQB RECIPE: ONE & A HALF HOUR BBQ BACK RIBS 2 racks pork baby back ribs about 1 1/2 lbs each (675 gm ) Dry rub: 1 tsp. coriander seed ground ( 5ml) ½ tsp cumin (2.5 ml) 1 tsp whole allspice ground (5ml) 1/2 tsp. dried ginger (2.5 ml) 2 tsp. smoked paprika (10 ml) 2 tsp. dried ancho chile, ground (10 ml) 1 ½ tsp. smoked salt (7.5 mll) 2 Tbsp olive oil (25 ml) 2 Tbsp. sweet smoky mustard (25 ml) Splash water to loosen mixture Brush and serve with my espresso bbq sauce or your favourite bbq sauce Remove membrane on bottom side of ribs as shown in video. Brush both side with olive oil and mustard mixture and sprinkle liberally with spice mix on both sides. Preheat bbq to 325 D F. To prepare all ingredients in spice rub combine grinder and pulse until finely ground. Grill on indirect heat of bbq (heat should be off directly below ribs) , with meaty side up , for approximately 1 ½ hours or until ribs are dark brown and tender but not falling apart. NOTE : for larger racks cooking time will need to increase. For more fall off the bone texture, reduce temperature to 300 and bbq for 2 - 2 1/2 hours. Brush with some bbq sauce for the last 10 minutes, just to caramelize and finish the ribs with a glossy coating. Cut into individual ribs and serve immediately.
